If you've heard of acrylamide in the past year, then you're probably aware that it is a carcinogenic chemical that was recently discovered in a wide variety of food consumed by humans on a daily basis.  Much ink and worry have been spilled since the discovery by a group of Swedish scientists in May 2002, but without the support and assurance of reliable research.
